BANANA FRITTERS

INGREDIENTS:-
 
3 peeled ripe bananas
1/2 cup of grandulated sugar
a pinch of tablesalt
21/2 cups of plain flour
1 egg
1 bottle of vanilla
a pinch of nutmeg or all spice.

PREPARATION:-
 
crushed bananas and blend in the half a cup of sugar with the one egg with a fork until smooth:-
Add
a pinch of salt
21/2 cups of plain flour slowly to maintain the smooth texture.
Add
1 tbsppon of vanillia
a pinch of grond nutmeg or allspice,stir in vigorously,until smooth.

COOKING:-
 
Preheat sauce/frying pan with generous amount of vegetable cooking oil,on Gas mark 4.
 
Use a large spoon to take up small portions and place into the frying pan for 1-2 minutes on each side,turn cooker to Gas mark 3.

BANANA CAKE

Ingredients:-
 
6 well-riped bananas
250gs of sugar-demerara
250gs of sugar- grandulated
375gs margarine
4 eggs
5 cups of sel-raising flour
2 tspoon of bicarbonate soda/powder
2 tspoon of tablesalt
1/2 tspoon of ground nutmeg
1/2 tspoon  of allspice
2 tbspoon vanilla
1 tbspoon almond essence

Preparation:-
 
1/ Preheat sauce pan on Gas mark 4;-
Add 250gs of grandulated sugar
250gs of demerera sugar
375gs of margarine
bring to boil then leave to cool before add  (6) peeled bananas (chopped finely).
 
2/ Whisk the (4) eggs and a tbspoon lemon juice and add to dish.
 
3/ Use a balloon whisk to blend in ;-
the caramelised sugar and margarine
peeled chopped bananas
eggs with lemon juice
into a bowl until smooth.
 
4/ Add 4-5 cups of selfraising flour and 2 tspoon of baking soda(mixed to gether before add to mixture)
 
5/ Add flour to bowl slowwly(while adding fold into the mixture and make smooth)
 

Cooking:-
 
Preheat oven 200 degree for 10 minutes
 
Place baking tin inside of oven for 5 minutes
 
Remove tin and grease surface of tin with a bit of margarine
 
Pour mixture into tin and place inside of oven,after 20 minutes,turn oven to 140 ,within 30 minutes cake is fully cooked.

When cooled slice generously and serve with a chunk of ice cream.(Rum and Rasin) delicious!!!mmmmm
