CARROT CAKE

Ingredients:-
250gms margarine
250gms gradulated sugar
5 eggs
4 cups of self-raising flour
1 tspoon salt
2 tspoon baking soda
1 tspoon allspice/nutmeg
1 tbspoon vanilla
1 tbspoon almond essence
1 lime/lemon

MIXTURE/PREPARATION
 
1/ Soften the margarine into the microwave for(11/2) one and a half minutes,or on the cooker until melt.(Leave to cool)
 
2 /When cool pour into a mixing bowl with 250gsm gradulate sugar mix until smooth.
 
3/Whisk the 5 eggs and one squeeze lime/lemon, when fluffy and to mixture and whisk until smooth. 
 
4/ Grate (500gsm) carrots(wash and peel before) add to the bowl,stir vigorously.
 
5/ Add the (4) four cups of self-raising flour and baking soda slowly to the mixture ,while adding the flour mix/stir the mixture until it is very very snooth
 
when satify with its smoothness add the following:-
1 tspoon vanilla
1 tbspoon almond essence
1 tspoon salt
1 tbspoon all spice/nutmeg
Blend in the above to the mixture inside of the bowl .
 

COOKING
 
Preheat at Gas Mark 220 degree for 5 minutes,Place baking tins for 5 minutes more,then remove and grease the tins.
 
Turn down the heat to 200 degree,half ful the baking tins and replace then inside of the oven for (20) twenty minutes,the turn down cooker again to 140 degree for (20) twenty minutes
 
Take out and leave to cool,when cool can be serve,store the balance by wrapping into a baking foil.
