PREPARATION:-
1 Wash and clean cowfoot pieces,then rinse in lemon water.
2 Put cowfoot to boil in a pot of preheated water.
3 After a few minutes boiling,check pot and skim with a spoon the froth from the
top of the water in the pot.
4 Half cook for two(2)hours,then:-
Add- pumpkin ,carrots(diced) corn on the cobs,spring onion and two(2)stock cubes.
Within ten (10) minutes add DUMPLINS (2cups of plain flour and one cup of corn meal,with
a pinch of salt,mixed with clean hands by adding cold water to the mixture and make in a dough,add small portions to pot as
it boils.
Within another ten(10)minutes add:-
fresh thyme,onions,irish potatoes(diced)to pot and stir thoroughlythen add
the jamaican pepper.
Cover pot and leave to simmer.
